The Health Benefits of Pumpkin
Before we get to the delicious pumpkin bread recipe, let’s discuss a little about the health benefits of pumpkins. As you know, pumpkins aren’t just for carving or decorating during Halloween! They’re a nutritional powerhouse that can seriously boost your health! Packed with fiber, vitamin A, and antioxidants, pumpkins make a great addition to your diet.
Good for Digestion!
Fiber is essential for digestive health, and pumpkin is a fantastic source. Adding pumpkin to your meals can help keep your digestive system happy and keep you feeling full longer, which can help with weight management.
Good for Your Peepers!
Indeed, pumpkins are rich in Vitamin A, particularly beta-carotene, a vital nutrient that supports sharp vision, enhances the immune system, and promotes radiant skin. Furthermore, the antioxidants in pumpkins combat free radicals, diminishing oxidative stress and potentially reducing the likelihood of chronic illnesses.
These nutritional benefits make pumpkin a fantastic ingredient for health-conscious bakers. By baking with pumpkin, you’re enjoying delicious flavors and doing something great for your well-being.
Let’s be real here – our pumpkin bread recipe is totally a dessert. Sure, it may not be the healthiest (thanks to the sugar and vegetable oil), but we absolutely love it. This was a special treat when Emily was young, and now she’s the one creating it for our family get-togethers. Some traditions are just too tasty to give up. So, without further ado, let’s dive into the recipe!
Pumpkin Bread Recipe
Ingredients
- 1 3/4 cup All-Purpose Flour
- 1 tbsp Pumpkin Spice
- 1 tsp Cinnamon
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 can Pumpkin Puree 15 oz. Can (DO NOT use Pumpkin Pie Filling)
- 1 cup Granulated Sugar can use Coconut Sugar
- 1/2 cup Brown Sugar
- 2 large Eggs
- 1/2 cup Vegetable Oil (we use Extra Virgin Olive Oil)
- 1 tbsp Vanilla Extract
Instructions
- Preheat oven to 375°F. Grease a 9×5 loaf pan and line it with parchment paper (let the paper hang over the edges) for easy removal. Set aside.
- Combine the flour, pumpkin spice, baking soda, and salt with a whisk in a medium bowl. Set aside.
- Combine the pumpkin, granulated sugar, and brown sugar with a whisk in a large bowl. Beat in eggs, oil, and vanilla extract. Gradually whisk in the flour mixture until it is smooth and free of lumps.
- Bake for 50 to 55 minutes, until a toothpick inserted in the center comes out clean. At around the 30-minute mark, loosely cover the top of the bread with foil to prevent overcooking. Pour the batter into the prepared loaf pan and use a spatula to smooth the top evenly.
- Allow to cool for 10 minutes, then slice and serve warm, or allow to cool completely.
Tips for Baking Success
To ensure your pumpkin bread turns out moist and flavorful every time, here are some essential tips:
- Measure Ingredients Accurately: Use the spoon-and-level method for flour to avoid packing too much, which can result in dense bread.
- Don’t Overmix: Stir the batter until the ingredients are just combined to keep the bread light and airy.
- Storage: To store your homemade pumpkin bread, first let it cool completely. Then, wrap it tightly in plastic wrap and pop it into an airtight container. You can keep it on your counter for up to 4 days or in the fridge for up to a week. Enjoy!
- Freeze: You can freeze individual slices or an entire loaf for up to 3 months! First, let the bread cool completely. Then, wrap the whole loaf or single slices of pumpkin bread tightly in plastic wrap. Pop the wrapped bread into a freezer-friendly ziplock bag and store it in the freezer for up to 3 months. For the best results, let the bread thaw in the fridge for 24 hours before serving.
- Parchment Paper: Greasing your baking pan and lining it with parchment paper makes sure the bread won’t stick and allows for easy removal. Plus, it makes cleanup a breeze!
- Cover With Foil: This pumpkin loaf is wonderfully moist and dense, so it needs a bit more time in the oven to bake through. While the outside will bake faster than the center, you can keep the top from over-browning by gently covering it with aluminum foil about 30 minutes into baking.
- DIY Pumpkin Pie Spice: Combine 4 tsp cinnamon, 1 tsp cloves, 2 tsp ginger, 1/2 tsp allspice, and 1/2 tsp nutmeg.
- Add Nuts or Chocolate Chips:I absolutely love pumpkin chocolate chip bread! Feel free to mix in up to 1/2 cup of chocolate chips, chopped pecans, or walnuts into the batter. If you’re a fan of Starbucks’ pumpkin loaf, try sprinkling pepitas on top for a delightful copycat version.
- Pumpkin Muffins: Want to make muffins with this recipe? Just bake them in a standard-sized muffin tin for about 18 minutes. For an extra special touch, I love adding a swirl of cream cheese icing on top!
- Use a Glass Loaf Pan: We love the glass bread pans from Anchor Hocking.
